I love meals that require less work, yet are still delicious. One-pot meals fall into this category. Since I have a few friends who’ve asked for my mom’s rice recipe already, I’ve decide to share with you all๐.
Note: You will need a rice cooker for this recipe.

Ingredient
- 2 cups of uncooked rice, you can use either white or brown rice
- 1-2 carrots, washed, peeled, and diced
- half red onion, chopped
- 2 links of Chinese sausage, diced
- 5-6 pieces of dried mushroom. diced
- 1 fillet of any kind of white fish, I used tilapia
- vegetable oil or other substitute is fine as long it does not have a strong flavor like olive oil does
- salt
- black pepper
- soy sauce
- roasted sesame seed
Cooking Steps
- Cut the fillet into 1 inch chunks and marinate the fillet with soy sauce and black pepper while prepping the other ingredients
- Soak dried mushroom in warm water for 20-30 minutes or until softened
- Dice carrot, red onion, Chinese sausage and dried mushrooms
- Wash 2 cups of uncooked rice, and fill water up to the appropriate waterline in the rice cooker before you put anything else in it (This step is important to avoid uncooked or soggy rice!) Drizzle with oil.
- Place carrot, red onion, Chinese sausage, dried mushroom and fillet into the rice cooker. Drizzle with oil and sprinkle with salt and black pepper.
- Start the rice cooker.
- When finished, stir the rice and sprinkle with roasted sesame seed.
