I love cold noodles! It’s easily one of my favorite refreshing summer dishes. It’s also very easy to make with lots of variation depending on what you have in the fridge or just whatever you want to throw on there as toppings.
Today, as shown in the picture, I have cucumber, red bell peppers, carrots, pickled daikon, tomatoes, egg, lamb slices and basil as my toppings. You can totally substitute it with other ingredients, such as shrimp, chicken or tofu as your protein, cilantro as your herbs, and add Asian pears as your fruit.

Ingredients
For the toppings, you don’t have to get everything below. As I said, this part is totally up to you. So have fun, create your own rainbow-color bowl!
Toppings
- 1 cucumber, sliced
- 1 carrot, sliced
- 3 eggs, scrambled
- 1 tomato, sliced
- 1 red bell pepper, sliced
- few lamb slices, pan fried
- 1 pickled daikon, sliced
- 1 bundle of basil, minced
Noodles
- 3 bundles of buckwheat noodles, again, you can substitute with other noodles if you wish
Sauce
- 6 tablespoons of sesame paste
- 4 tablespoons of rice vinegar
- 2 clove of garlic, minced
- 1 finger-size ginger, minced
- 6 tablespoons of water
- 2 tablespoons of soy sauce
- 1 tablespoons of sugar
- 2 tablespoons of sesame oil
Cooking Steps
- Prepare all your toppings, wash and slice. If the protein needs to cook, such as eggs and lamb, you can simply pan fry them until cooked with oil. There’s no need to season them since the sauce will coat everything later.
- Boil a pot of water and cook your noodles according to the package. When done, drain the water and rinse it under cold water. Put some sesame oil in it to prevent sticking.
- While the noodles are cooking, you can prepare your sauce. Mix everything together and adjust based on your preference if you want it more vinegary or sweeter.
- Assemble the noodles in a bowl, place the toppings on top, and drizzle with sauce.
