Quick and Delicious Lamb Rack Recipe: No Marination Needed

I like recipes that requires no marination and no more than 10 ingredients. This lamb rack recipe is one of those and is also a great holiday dish or just an any-day meal.

Ingredients

  • 1 Lamb rack
  • 1 Rosemary sprig
  • 1 Handful Mint
  • 2 Cloves of garlic
  • Salt
  • Black pepper
  • Ground cumin
  • Butter (1 Tablespoon)
  • Olive oil
  • Dijon mustard (optional, but goes well with lamb and mint sauce)

Cooking Steps

  1. Rinse and pat the lamb rack dry with a paper towel.
  2. Cut a line along the bone between the ribs. Do not cut it all the way through.

3. In a non-stick pan, place the rack skin-side down and quick-sear it until golden.

4. Take the rack out, and generously sprinkle salt, black pepper and ground cumin on top.

5. Place the lamb rack back onto the pan and add one rosemary, 2 cloves of garlic, and 1 TB of melted butter on top. Cover with lid, and let it cook on high for 4 minutes. After 4 minutes, flip it to the other side, and cook it for another 4 minutes. Repeat this step one more time for a total of 12 minutes cooking time.

6. In the meantime, crush the handful of mint leaves with olive oil using a mortar and pestle. If you don’t have one a blender or food processor can speed up the process, otherwise chop it up fine with a knife.

7. After 12 minutes of cooking, let the meat rest on a cutting board for 5-10 minutes before cutting. The meat should be medium rare at this point. If it looks a bit too raw for your liking, just quickly sear it for another minute on each side. Do not over cook the meat!

8. Serve the meat with mint/olive oil sauce and a bit of Dijon mustard on the side.
